  • 150g Bakers Blend Spelt flour
  • 1 tsp baking powder
  • 2 tbsp caster sugar
  • Pinch salt
  • Large pinch mixed spice
  • Zest of a small orange
  • 1 large egg
  • 250 ml milk
  • 30g melted butter, cooled
  • Tsp vanilla extract



Sift together the dry ingredients into a large bowl, and in another, whisk together the egg, milk, butter and zest. Stir the wet mixture gently into the dry, and leave to stand for 15 mins, or if you can't wait that long, at least while you heat the waffle iron.

When the griddle is hot, pour in the mixture, taking care not to overfill - better an undersized waffle than a lava-like overspill. Close lid, and cook until crisp - times will vary according to the type of machine you're using.

Serve : to a chorus of oohs and aahs - with maple syrup, or chopped banana and nuts, or with crema di cacao e nocciole (aka Nutella....)
