Monty's Pancake Recipe

Ingredients:

  • 160g/5¾oz/scant 1¼ cups white spelt flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 220g/7¾oz/1 cup sourdough starter
  • 180ml/6fl oz/¾ cup spelt drink
  • 60ml/2fl oz/¼ cup sparkling water, plus extra if needed
  • 1 egg
  • 1 tbsp melted butter
  • olive oil, for frying
  • toppings of your choice

 

Method:

  1. In a bowl mix together the flour, salt and baking powder. Make a well in the centre and add your excess sourdough starter.
  2. Next, top up your spelt drink with sparkling water and add the beaten egg and melted butter. Pour into the mixture and beat with a knife until the batter is ‘pourable’ (if it’s too sticky, add some more sparkling water) and leave to rest for 8–10 minutes.
  3. To cook the pancakes, add a dash of olive oil to a frying pan over a high heat. Once the oil is super-hot pour in your batter mix until there’s enough to thinly coat the bottom of the pan. Quickly spread the batter over the pan and cook for about 2 minutes. Lift the edge of the pancake to check it’s golden brown underneath, then turn it over (toss if you’re feeling adventurous!). Cook for a minute or so on the other side until brown spots appear, then remove from the pan. Repeat until all the batter is used up or you are too full to move.
