Heritage Apple and Rhubarb Crumble

Serves 4-6

 

Ingredients

 For the crumble mix:

  • 150g coconut oil*
  • 200g Sharpham Park Organic Heritage Flour
  • 100g rolled oats
  • 50g pecan nuts (roughly chopped)
  • 50g mixed seeds
  • 100g demerara sugar

 

For the fruit mix:

  •  5x Bramley apples approx. 850g (peeled, cored and chopped into 2cm chunks)
  • 400g rhubarb (roughly chopped into 2cm slices)
  • 1x orange zest and juice
  • 4x cardamon pods (shell removed and discarded, seeds crushed in a pestle and mortar)
  • 1/4 tsp ground allspice
  • 75g soft brown sugar
  • 100g dates (stones removed and chopped)

 

Method:

Pre-heat the oven to 180oc, Gas mark 4.

  1. In a large pan add all the ingredients for the fruit mix and on a medium heat cook the fruit whilst stirring until its starts to break down slightly for approximately 4 mins
  2. Spoon the fruit into an oven-proof dish roughly 22cm by 22cm.
  3. In a large bowl combine the coconut oil, flour and oats and gently rub together with your fingertips to form a breadcrumb consistency, then mix the rest of the ingredients from the crumble mix list.
  4. Scatter the crumble over the fruit and cook in the oven for 25-30 mins until golden
  5. Serve with some fresh coconut yoghurt

 

*Cooks tip

This recipe is vegan as we are using coconut oil but you can change it by swapping the coconut oil for butter. Also try swapping the fruit combinations, depending on what fruit is in season.
